Harvesting Our American Guinea Hogs

Harvest time has finally come for our American Guinea Hog pigs. We use a traditional scald and scrape method to remove the pig hair and preserve the skin and back fat (which is lost during a typical pig skinning).
Though it was not flawless, the process went smoothly. It wasn't the best scraping ever, but it was sufficient.
