If you feed your dairy animals corn, their milk will contain that reprocessed corn oil and so will their cheese. The white colby is from free-range (corn-free) goats and made with unpasteurized milk. The yellow colby is from a commercial grain-fed dairy operation (from the grocery store.) The yellow color is added to make the cheese look like its been aged, In actuality, the white cheese has been aged twice as long. Corn-fed cheese is a relatively new food item, and significantly different than traditional cheese.
