Place three poles in a line, flat on the ground. Work over the poles in an S shape, asking your horse to step over them, turn back towards the line and step over the next. The closer together the poles are, the more difficult this exercise is, so adjust the distances if you feel your horse is struggling or finding it too easy.
Look for your horse to be relaxed and walking with a steady rhythm. Ideally if you want your horse to step over the pole with his inside forelimb first.
