Duck With Honey & Ginger Noodles | Feed My Friends 2

INGREDIENTS:
2 Large Duck Breasts
Pinch of Five Spice Powder
Squeeze of Honey
2 Limes
2-3 tbsp Soy Sauce
1 tbsp Mirin
1 Knob of Ginger
1 Chilli Thinly Sliced
2 Cloves Garlic
Handful Flat Leaf Parsley
1 Packet of Fresh Noodles
2 Shallots
50 g Corn Flour
75 g Plain Flour
5g Baking Powder
150-200 ml Soda Water

TEP 1: COOK THE DUCK
Score the duck skin in a criss cross pattern and place into a cold pan skin-side down, set over a low heat. Cook very slowly until the fat starts to render and turn up to heat. Crispy up the skin, flip over and sprinkle with five spice powder. Place in to the oven for 3-8 minutes depending on the size at 180 degrees C.

STEP 2: MAKE NOODLES AND DRESSING
While the duck cooks, fry the shallot with garlic, chilli and chopped ginger in a little oil over a high heat. Add in the noodles and stir fry before adding in the soy sauce, mirin, the juice of the limes and a good squeeze of honey. Remove the duck and leave to rest for 5 minutes.

STEP 3: TEMPURA SHALLOTS
For the tempura shallot, mix together all the ingredients, add in the shallots and deep fry at 160 degrees C for 1-2 minutes.

STEP 4: FINISH AND SERVE
Sprinkle in some chopped parsley to the noodles, spoon through the juice from the rested duck, and place onto a plate with the sliced duck on top and a generous sprinkling of crispy shallots.
