This is how I roast my free range ducks I raise for crispy duck skin it's very important to flip the bird at least every 20-30 minutes, this is more than likely the most important part of cooking a roasted duck.
Cooking times based on my experience for free range duck meat, it is much more dense meat compared to farm raised meat so it takes a touch longer, but is still very juicy and tender
325°f Oven Temperature
Pekin Duck
6 pounds --- 3 hours
6.4 pounds --- 3 hours 15 minutes
Muscovy Duck
8.2 pounds --- 3 hours 45 minutes
8.8 pounds --- 4 hours
Rouen Duck
4 pounds --- 2 hours
4.4 pounds --- 2 hours 30 minutes
