Ingredients -
Grilled Chicken :
• 4 grilled chicken breasts
Mozzarella Eggplant :
• 4 tablespoons extra-virgin olive oil
• 1 medium eggplant, cut crosswise into 1/4-inch-thick slices
• Salt and ground pepper to taste
• ½ lb. fresh mozzarella, sliced
• 2 large tomatoes-sliced thick
• 1/4 cup fresh basil leaves, chopped
• 2 tablespoons balsamic vinegar
Method :
Grilled Chicken preparation -
Marinate chicken in a plastic bag with low fat Italian vinaigrette for 1 hour. Then throw on the grill for 8-10 minutes or until desired texture.
Mozzarella Eggplant preparation -
Preheat oven to 400 degrees. Brush eggplant slices with 1tbs. of ex-virgin olive oil and place on cooking sheet. Bake until eggplant is golden and tender, about 20 minutes.
On a serving platter, layer eggplant with sliced mozzarella and tomatoes. Top with basil leaves and drizzle with 2 tablespoons olive oil and balsamic vinegar. Serve with grilled chicken.
