Maple Balsamic Chicken- with Eat Feed Love and yoyomax12

Eat Feed Love sent me a taste club box to try and I made this delicious maple balsamc chicken using the ingredients in the box.
With each purchase Eat Feed Love donates to charities that help feed hungry people.

Recipe:

3 tablespoons olive oil for frying chicken
2 pounds chicken breast halves (approx 3-4) pounded thin
salt and pepper,
1 teaspoon dry thyme (or 2 tsp fresh)
About 1 cup of thinly sliced onion (more or less to taste)
2 cloves of garlic minced
3/4 cup chicken broth
1/2 cup balsamic vinegar (I used the Vermont Maple balsamic vinegar from my Eat Feed Love box)
1 tablespoon maple syrup
1 tablespoon Dijon mustard (I used the honey balsamic mustard from my Eat Feed Love box)

Heat 2 tbsp of the olive oil in a large skillet. Add chicken breast and season with salt and pepper and half the thyme. Cook on one side on medium high for about 5 minutes.
Turn chicken over and add the other half of the thyme and sprinkle with more salt and pepper. Cook an additional five minutes or until chicken is done. Remove from pan an place on a plate.
In the same skillet add the remaining 1 tsp olive oil and the onions and garlic. Cook until the onions are garlic are browned. Add chicken broth, balsamic vinegar and maple syrup.
Cook for about 5 minutes at a boil until the mixture reduces to half and thickens.
Add the cooked chicken breast pieces into the pan, turn to coat and baste with sauce. Heat the chicken back up and serve.
