Cheap Roast Chicken Recipe (Less Than a Dollar/Serving!) Feed Your Family For A Week With One Meal!

Cheap roast chicken recipe that can feed your family for a week! This easy roast chicken recipe will save money on your grocery budget because it’s the only meat you will need for the whole week if you meal plan right!
The cheapest way to buy chicken is usually either whole or as chicken quarters! At my Aldi, I got this whole chicken for $0.95/pound, and that’s why I can make this recipe (seasoning and stuffing included) for around $0.70/serving!
The leftover chicken can be re-purposed for chicken burritos, Asian stir fry, chicken pasta salad, soups, etc to stretch it even further for the week's dinners and lunches. I can meal prep a whole week’s worth of meals out of one chicken!
Ingredients:
5-6 lb whole chicken
1 onion sliced
1 lemon halved
1 whole garlic bulb halved crosswise
1 tsp dried thyme or 5 sprigs fresh thyme
2 TSB unsalted butter melted
Kosher salt
Fresh ground black pepper
Directions:
Preheat oven to 425 degrees F and adjust oven rack to middle position. Remove chicken giblets and dry chicken with paper towels. Place chicken in 9x13 roasting dish. Stuff chicken cavity with the lemon, garlic, thyme, and generous sprinkles of kosher salt. Tie chicken legs with kitchen twine and tuck the wings under the breasts. Brush chicken all over with melted butter and season generously with kosher salt and fresh ground pepper. Arrange onion slices around chicken and bake in oven for 1.5 hours or until breast registers 165 degrees. I usually check the temperature at least 15 minutes early to be safe. (Over cooking this chicken can make the drumsticks dry.) Remove chicken from roasting pan and allow 20-30 minutes to rest before carving. Enjoy!
Gravy:
When you remove the chicken from the roasting pan after cooking, add ~1TBS of flour to the chicken juices/onions in the pan and whisk until gravy forms. Depending on how much drippings the chicken released, you may need to add 1/4-1/2 cup of water to thin the gravy while whisking. Taste and adjust seasoning. Strain if you prefer smooth gravy.
