Chicken Cordon Bleu Casserole

This casserole will easily feed 8. Simple, easy and delicious. This recipe is something you must try! Don't need that much? Divide the recipe into 2 dishes and freeze one.
FYI: I cooked the chicken in my pressure cooker in 12 minutes, set it aside to cool, then used the broth from that chicken to make the rice, also in the pressure cooker. It was all sooo easy!!!
CHICKEN CORDON BLEU CASSEROLE
2 cups white rice
3 cups chicken
6 slices of Swiss cheese .spread a VERY thin coat of mustard on each slice of cheese before you lay it down, mustard side is face down towards the chicken (my secret addition & more like cordon bleu)..
10 slices of ham --diced
2 cans of cream of chicken soup
1/2 cup of milk
1/2 cup of sour cream OR plain Greek yogurt
Juice of 1/2 a lemon into the chicken soup/sour cream mixture
10 to 15 saltines crushed finely
Paprika--1/2 tsp or so
Garlic powder--1/4 tsp or so
Preheat oven to 350; spray 9x13 baking dish with cooking spray
Cook 2 cups of white rice; spread in the bottom of baking dish
Cook 3 cups of chicken; arrange on top of rice
Layer 6 pieces of Swiss cheese on top of chicken
Dice up 10 slices is ham; layer on top of cheese
In separate bowl, mix 2 cans cream of chicken soup, 1/2 cup milk and 1/2 cup of sour cream or plain Greek yogurt; spread on top of ham
In another bowl, crush 10 saltines, add 1/2 tsp paprika, 1/4 tsp garlic and mix together; sprinkle on top of soup mixture.
Bake at 350 for 30 minutes
