Angelo's Advice #2 - Healthy BBQ Recipe - Herb Chicken and Vegetable Kabob's

A healthy on the go recipe for the summer complete with a quick and flavorful marinade to enhance the taste of fresh colorful veggies and juicy free-range chicken!
Serves: 5 – 2 skewers each

Cook time – 15 min
Ingredients for Marinade:
*Finely minced garlic – 2 TBSP
*Fresh lemon zest – 2 TBSP
*Freshly squeezed lemon juice – 4 TBSP
*Minced basil, rosemary and oregano – 4 TBSP
*Sea salt – 1 TSP
*Black pepper – 1/4 TSP
*Extra virgin olive oil – 4 TBSP

*Cut 2 medium zucchini into ½ inch slices
*Cut 1 large red bell pepper into ¾ inch squares
*Cut 1 medium red onion into wedges
*Cut 1¼ pounds boneless skinless chicken breasts into 1 inch cubes
Use organic/Free-range chicken

1. In a small bowl combine garlic, lemon zest, lemon juice, herbs, salt, pepper, and olive oil.
2. Place cut vegetables in a zip lock bag and add 3 tablespoons of the herb marinade.
3. Place chicken in separate bag and add remaining marinade and toss to coat.
4. Let sit in the fridge for 45 minutes to 6 hours.
5. Place the marinated vegetables and chicken on the skewers
6. Preheat the grill with medium heat
7. Place skewers on the grill for 3-4 minutes then flip them.
8. Continue to cook and flip when necessary until the chicken is cooked through to 165*
9. Serve with lemon wedges and squeeze on top.
