The kitchen freezer is an underutilized tool for cooking great meals. With a little bit of thought and preparation, your freezer can be a valuable asset during the busy work and school weeks. The idea is to stock your freezer with foods that are fresh, nutrient-dense and easy to thaw. They should also be versatile so that you can plan a variety of menus to please many palates. Registered dietitian Susan Bowerman has long been a freezer cooking fan. Over the years while raising a family and working full time, Susan used her freezer frequently when planning meals and also for healthy snacks. She continues to stock her freezer even now when it's just dinner for two!
Here are some of Susan's suggestions on what to keep in your freezer:
Proteins: Cooked chicken breasts with a variety of seasonings. Cooked and raw shrimp for soups and stir fry.
Vegetables: Loose-leaf spinach is great for soups, salads and tossing in a special weekend omelet. Edamame, whole or shelled, for a quick and protein-rich snack.
Brown rice: Packets of cooked brown rice save time on busy evenings.
Fruits: Some favorites include sliced mangoes, pineapple, cherries and banana.
Nuts: Frozen raw almonds thaw quickly for an afternoon snack.
