National Chung Hsing University’s Li Bai-yuan, who has been researching free-range chickens for over thirty years, took his students across Taiwan in search of the finest genetic specimens for preservation through selective breeding. Each particular breed of free-range chickens is best adapted to its immediate surroundings and the diseases to which it is exposed, said Li, who added that the breeds he selected were all endowed with strong immune systems to allow for the reduced use of medication. Li established the only domestic center for preserving the genetic diversity of the free-range chicken, which has already defined over 17 different breeds.
